BigFoot stands by the quality of these wheat products and will use no other wheat based products for our Toasting Bread and Pitas. Shepherd’s Grain flour is a premium quality flour produced from a blend of two types of Dark Northern Spring wheat. The two varieties of wheat are milled at a low temperature to preserve the flavor of the flour. The resulting flour has a very strong gluten which gives the resulting dough a very forgiving nature and has a high workability.
